Lightened only by a few bags of Weyermann pilsner malt, Quiet Company’s grist is now primarily Brewing Malt Type Cologne, a Weyermann specialty grain that lends a distinctive maltiness, touch of color, and mild sweetness. And it was allowed to condition at frigid lager temperatures for five weeks. As always, we approached this style with the utmost respect. Kölsch remains all about finesse.
