Commonwealth Brewing Co. Cimmerian

Cimmerian is one of our legacy beers, brewed over the years with a lot of labor and love. Brew day typically spans 12 hours from start to finish, hitting every mash step possible to extract maximum flavor from the grain bill. In this batch, we taste notes of toasted bread, caramel, subtle nuttiness, dark fruit, mild coffee, and chocolate, with just a hint of roast character. These flavors are perfectly balanced by a mild hop bitterness, finishing with rich malt flavors and a full-bodied mouthfeel. This is the first version of Cimmerian that never touched a carb stone. Instead, we allowed fermentation to naturally carbonate the batch, resulting in tiny, tight bubbles that maintain a generous foam head as you enjoy this beer.
